Zucchini noodles!

Hi friends, just a quick post.  Over the past year I've tried to switch to a mostly Paleo/primal diet.  I'm certainly not perfect with it, but hey, I'm trying!  One of my favorite discoveries over the last year has been zucchini noodles! I'm in love with them!  There are great gadgets out there that can make zucchini noodles quickly.  I haven't invested in one yet.  For now I'm just using a vegetable peeler & knife.  I use the peeler to peel the zucchini into thin sheets. I stack them up, then cut them into strips.  After that I sauté the strips in a little olive oil & serve with my favorite spaghetti sauce. Simple, easy & healthy!  

Good for you smoothie!

My little guy loves to make smoothies!  

It's something he does everyday.  This is his basic recipe...he asked me to post it. ;)

1/2 cup yogurt

3/4 cup milk of choice-we use raw milk or coconut milk. 

A few frozen strawberries

1/4 cup frozen blueberries

1 scoop of Berry Greens from It Works

Blend and enjoy!  If its too thick, just add a bit more milk. 

If we add sweetener, it's usually local raw honey. 

Through the eyes of a child!

My little guy was very excited! He found a little scraggily pine tree in our back yard this morning.  Well, in MY opinion it was a scraggily ol' pine tree.  I didn't tell him that, I just smiled.  After showing me his prize, he disappeared for about 5 minutes.  After a little bit, he came back smiling with his little pine tree in one of old my ceramic planters.  He said, "See mom!"  Then explained how its going to grow and he's going to decorate it at Christmas time!  I love how he didn't see this tree as I did!  He saw something grander.  I also know, that if this little tree is still alive at Christmas, he'll decorate that baby!!  It reminded me of how The Lord sees me.  He doesn't look at me and say, "Look her, she's just a scraggily ol' mess!"  His love is perfect. He sees the BIG picture. He knows that I'm a work in progress, growing in Him.   I'm so thankful for that and also for the lessons He teaches me through my little ones!
